(Or not) MOM's Apple Pie

Whoever said "easy as pie" should have learned to roll a pie crust while still connected the apron strings his mother. Most of us, though, the perfect Pizza is an indescribable kitchen. While I can boast of stealing the show more of a Thanksgiving dinner with my Gold, flaky crusts pies, I have to confess that I considered pie do to be a fairly labor intensive, arduous chore, and I just wanted to attempt once a year. That was until I discovered pies crus. Not only are these finalised desserts easy to master and a big chunk of conversation, they are also much healthier than the traditional pizza (while still being a delicious way to terminate any party).

Raw Apple readily accepts any personal touches you would like to do. Don't like ginger? Let him and put instead of vanilla. Oranges? Ignore them and add the lemon zest or even a banana. Don't be shy. Is your kitchen, and there is no judges.In addition, with desserts, raw, you can prove you go. Yum!

Pecan pie crust

pecans 2 c.

c.1 pitted dates

cinnamon t 1.

Optional: pinch of salt

Soak the hot dates in enough water to cover until softened.Place Pecans, cinnamon and salt, if using, in a food processor. Wrist up nuts are finely minced. Remove nuts and place in a large bowl.(This is a good time to grind walnuts for pie filling, so you don't have to wash your food processor repeatedly). drain the water reserve dates, and put the dates in a food processor. mixture of reserved dates, adding water as needed to form a thick paste. Add the bowl and mix with pecans. Knead briefly until a soft, sticky forms "mass" that will keep its shape. Press evenly into a pot pie. cut off any excessive "mass", refrigerate and use later as a topping on oatmeal or as a bite dessert.

Filling

c. 5 apples, peeled, seeded and thinly sliced. approximately 5-6 large apples

c.1 pitted dates

1 lemon, juiced and zested

ground cinnamon 2 t.

cardamom soil 1 t.

tooth soil 1 t.

1 t freshly grated nutmeg.

nuts 1 c.

Soak the hot dates in enough water to cover * until softened. Place walnuts in a food processor and pulse until picado.reserve.thin slice apples, toss with lemon juice and zest. drain the dates and reserve water immersion.Place the dates and the spices in a food processor and blend, adding water immersion as needed until blended in a folder.Add the apples and toss with your hand until apples are coated with a mixture of date.Add walnuts as necessary to obtain the desired consistency.Filling should be thick and able to maintain its shape rather watery or syrupy.Taste filling and adjust spices to taste. Arrange Apple filling at the top of pecan crust.Cover with all pieces of nut spare. refrigerate at least an hour or more night and serve with cream cashew.

* For a pizza truly raw, use temperature water and soak overnight dates.

Cashew Ginger Orange Cream

Better than a substitute whipped cream, this milk is a spoon cream free licking addition to any pie autumn.

Makes about 2 cups

cashews 1 c.

1 ripe banana

2 oranges, zested and juiced

1 finely t. grated ginger

cinnamon ½ t.

1 t. vanilla (optional)

Soak cashews in water to cover from 1 to 12 hours, discard. drain water immersion and place in Blender with ½ c. water, banana, orange juice, zest and spices; blend until smooth, adding fresh water, if necessary, so that may be blended cashews. taste and adjust spices to taste. refrigerate until ready to use. Cream will thicken as he chills.

So exactly what is all the hype about raw foods? Is this just some fashionable new age mumbo jumbo that sounds impressive when chatting up your hot yoga teacher or is there something more to it? Most of the general population wonders why anyone in their right mind would want to follow such a regime...it sounds like a life based on restriction and deprivation. Images of people walking around starving half to death munching on raw carrots all day are what jump to mind.

So I'm going to attempt to set the record straight, from my first hand experience with being high raw (eating raw foods about 80% of the time). A raw foods diet consists of eating living foods only. This includes uncooked fruits, vegetables, nuts, seeds and sprouted grains. No food that has been cooked over 112 degrees. Many raw foodists are also vegans meaning they do not consume any animal products whatsoever, but non-vegans can include raw fish, meat and dairy products.

This may sound extreme since it so different from the Standard American Diet that has been the norm for many people for their entire lives. This Standard American Diet (SAD...an appropo acronym) consists of an exorbitant amount of cooked animal products, meat, dairy, processed foods, sugar and artificial ingredients. Green vegetables are practically non-existent and fiber...what is that?

In reality, which of these two diets is extreme? The one that leads to increased vitality and energy, a youthful appearance, weight loss, longevity and optimal health or the one that leads to a host of degenerative diseases such as heart disease, diabetes, obesity and cancer that plague our country and are completely preventable? Personally, given the choice between aging gracefully and retaining my current energy and fitness levels until the end of my life versus being reliant upon medication and gradually watching my body fall apart to the point where I cannot continue to do the things I love, I think the choice is pretty clear.

The reason foods are not cooked over 112 degrees is that the enzymes are destroyed by heat. Living foods retain all of their enzymes and thus their vitality. "Enzymes are living proteins that direct the life force into our basic biochemical and metabolic processes", explains Gabriel Cousens in his book Conscious Living. Enzymes aid in digestion, they balance and enhance the immune system, detoxify the body, help heal cancer and other diseases, make active hormones, transform and store energy, help repair DNA and RNA and their very presence slows down the aging process. Given all of that, how can we ignore these little buggers?

We are born with a finite amount of enzymes. If we do not get enough from the food we eat, we eventually deplete our bodies' natural supply. Without these essential enzymes to break down and digest the food, the food becomes stored in our bodies as toxins and leads to a variety of diseases.

The physical signs we associate with aging start to occur when the concentration of enzymes decreases within our bodies. This is why so many people who have converted to a raw foods lifestyle claim they have reversed the aging process. By eating only raw foods, your aging symptoms start to disappear. Skin appears younger and smoother, hair becomes thicker and shinier, eyes brighter, and aches and pains become a thing of the past. A person who eats primarily raw foods stands out in a crowd because they look so vibrant and alive.

Raw foods give you real energy, not the false energy you get from coffee and artificial stimulants. The living foods rejuvenate and feed your cells the high quality nutrients and enzymes your body needs, resulting in a feeling of lightness and a surplus of energy. Brain fog lifts and is replaced by mental and emotional clarity. Mood swings and PMS become a distant memory and food cravings gradually disappear.

The Standard American Diet is very acid forming. Cancer and disease thrive in an acid environment. When your diet is comprised of raw fruits and vegetables as well as nuts, seeds and sprouted grains, you will shift from an acid state to an alkaline state. Cancer cannot live in an alkaline body.

All of these benefits aside, this article would not be complete unless I address the question of where do you get your protein? That's always the first question people ask me when they hear about the way I eat. We've been brainwashed by the meat and dairy industries about the quantity of protein we need to consume on a daily basis; it is financially in their best interests if we continue to each a huge slab of steak every night for dinner and consume cheese in every form at each meal. Raw food vegans get their protein from green vegetables, nuts, nut butters, sprouted grains and various supplements such as wheatgrass, spirulina, and maca. Vegans claim that these protein sources are more easily assimilated into our bodies than those of animal sources and don't pose the same health risks since they lack the saturated fat found in animal foods.

Many health professionals believe that people do need some animal protein in their diets to achieve optimal health. Dr. Caroline Fierro, a board certified doctor in anti-aging explains that "animal protein contains essential mitochondrial components, namely Ribose and Carnitine, which are not present in plant proteins and are the heart's primary source of energy". People in the raw food community who are not vegan can include raw animal products such as meat, fish or dairy to meet these requirements. Model Carol Alt has been a prominent proponent of eating this way for several years now as she outlines in her books Eating In The Raw and The Raw 50.

Personally, I grapple with the protein issue. Morally I am against killing animals for food, but I cannot argue with the fact that I feel better when I consume some animal products. That said, there are numerous testimonials from long-term raw vegans who thrive without any animal products in their diet. We are each bio-individually unique and there is no perfect diet that will work for each and every one of us. The only way to discover what is right for you is to experiment. Your body knows what it needs...you just need to listen to it and learn to eat more intuitively.

What is nice about the raw foods lifestyle is that it is not something you need to commit to doing 100% of the time. You can add as many raw foods into your diet as you feel comfortable with. You will still enjoy improved health by making small changes and you may find that you start feeling and looking so good when you eat raw, that you want to add more. In my case, I started gradually, committing to one meal a day raw, then increased it to two meals a day. I now eat only raw foods for breakfast, lunch and snacks, but do include some cooked foods at dinner. Although I have not found that 100% raw is right for me at this point, I am loving being high raw (75-80%) and have no plans to go back to the way I used to eat.

So do I fit the image of the person walking around starving half to death with my little baggie of raw carrots? Absolutely not! I never allow myself to even get hungry and I enjoy a wide variety of flavorful food every day. The food I eat is much more satiating than the processed food others eat, so I end up feeling full on less food. I've expanded my definition of the word salad to include wonderfully unique, tasty treats that even my cooked carnivore friends adore. My creativity in the kitchen has taken off since going raw. When I bring food to parties, people rave about it and request the recipe. Many times I don't even mention the fact that the dish is raw and...heaven forbid...healthy...for fear of turning them off to it. If I told them it was full of cheese and white flour, they would dig right in, but vegetables and nuts...how scary.

The way I feel eating this way is what I love the best. I have boundless energy and have never felt stronger, I never need a caffeine or sugar boost, my mood is positive, and my focus is sharper than ever. My tennis game has improved noticeably, my hair and skin look better, and I have received numerous compliments on how I look in general. The only way I can accurately describe it is to say I feel younger. My body is functioning better than it did in my twenties. When everyone my age sits around complaining about all of the ailments they are suffering from and how aging sucks, I don't have much to add to the conversation and I have to say, for once it feels pretty damn good to be an outsider.

Weight loss and beauty by a raw Food diet

Raw diet promotes beauty. To begin with, one reaches his or her ideal weight more readily and maintains it with much less effort than on a cooked diet. Many people lose 15 pounds in a month or two with no feeling of deprivation whatsoever. Obese people lose much more than that while eating raw fats all they want, including raw "ice cream," avocados, nuts and olives. Raw fats (from avocados, olives, nuts, seeds, coconut butter et al.) are actually needed by the body to maintain youthful skin, hair and glands. They are rich in the essential fatty acids linolenic acid and linoleic acid that are denatured by heat.

Raw food pioneer Dr. Ann Wigmore wrote, "The effectiveness of live foods and fresh juices, especially wheatgrass juice, has bankrupted many complex theories about why we become fat and how to reduce quickly ... Among our guests at the [Hippocrates Health] Institute, the average weight loss per week is between four and fifteen pounds" (The Wheatgrass Book, p. 59).

Studies have shown that raw food is less fattening than the same food cooked. According to Dr. Edward Howell, raw fats are not fattening and seem to belong in "a special pigeonhole in nutritional speculations" (Enzyme Nutrition, p.109). While cooked fats accumulate in the body and become very detrimental to our health, raw fats contain lipase (deficient in many obese people), the enzyme involved in metabolizing fat properly.

The word "Eskimo" means "raw eater," as the Eskimos traditionally ate nothing cooked but subsisted chiefly on raw meat and blubber. Dr. V. E. Levine examined 3,000 primitive Eskimos during three trips to the Arctic and found only one person who was overweight.

Cooked starches are also very fattening. Farmers have even learned that it is necessary to feed their animals cooked food to fatten them up for maximal profit. Hogs do not get fat on raw potatoes, but cooking the potatoes makes them gain weight.

In addition to reaching your body's ideal weight, many other beauty factors blossom on a raw diet. Cellulite, which is thought to result from eating heated fats, gradually disappears with the consumption of freshly squeezed grapefruit juice. On a raw diet, elimination of cellular waste and increased lymphatic drainage helps remove cellulite.

As the body's old cells are replaced with new, healthy cells through proper nutrition that only a raw diet provides, your hair grows in thicker and at times wilder. It may even regain color after having been gray, as did Ann Wigmore's. Your skin may become as soft and smooth as it was in your youth. Your nails will be strong, clear and shiny. Facial lines may fade or disappear; the face's pasty, white complexion becomes ruddy or rosy. People may remark on how much younger you look. Your eyes will sparkle.

The Hippocrates Health Institute, one of the places where people have gone to learn about the raw food diet, was once described by Cosmopolitan magazine as the "well-kept secret" of beauty and rejuvenation of various famous Hollywood movie stars and celebrities. Now the news media are letting the secret out.

When Demi Moore appeared in a bikini in the Charlie's Angels movie Full Throttle and looked every bit as great as the women younger than her, the word went out that the secret was her raw food diet. Other celebrities who have caught the wave include Alicia Silverstone and Woody Harrelson.

Model Carol Alt wrote in her book Eating in the Raw that the raw diet helps her stay beautiful, slim and young-looking. She attributes her current youthfulness and stamina to having eaten primarily raw food for eight years. She explains that in her thirties she had to starve herself and exercise a lot to stay trim. But as a raw fooder she is able to eat anything she wants, as long as it's raw, and she maintains her weight effortlessly, without ever feeling excess hunger. In addition, she claims she has better abdominal definition without exercising than she did as a cooked fooder who exercised regularly. She also has fewer wrinkles.

Health and beauty are intertwined. Dr. Herbert Shelton wrote, "The woman who maintains her health and youthfulness will retain her attractiveness. If she permits her health to slip away from her, if she values indulgences and frivolities more than she does health and impairs her health in the pursuit of false pleasure, she will lose her BEAUTY; and no art of the cosmetician and dressmaker will be able to preserve it for her."

Researcher Arnold De Vries writes, "In the final analysis, we must regard beauty, health and youth as intimately related. To the extent that you preserve one in your physical being, you also preserve the others. The uncooked fruit and vegetable diet, pure water, sleep and rest, sunshine, strong relationships, exercise, fresh air, fasting if necessary, and abstinence from drugs, vaccines, serums and other toxins are the prime requirements in your attempt to preserve your youth, health and beauty as long as you can" (The Fountain of Youth).

The face becomes more beautiful with a raw diet. "Skin loses its slackness and puffiness and clings to the bones better," write Susannah and Leslie Kenton (Raw Energy, p. 90). "The true shape of the face emerges where once it was obscured by excess water retention and poor circulation. Lines become softer. Eyes take on the clarity and brightness one usually associates with children or with super-fit athletes."

Nutritionist Natalia Rose, author of The Raw Food Detox Diet, profoundly praises the raw food diet as being the key to permanent weight loss. It's a lifestyle in which a woman can even attain her perfect shape without formal exercise or counting calories or grams of fat or carbohydrates and regardless of having had several children. The skin tone improves as cells become healthier and tighter. One dares to go out without make-up.

Tonya Zavasta describes her lifelong obsession with attaining beauty, which she finally discovered in her 40s through a 100% raw food diet. In her book Your Right to Be Beautiful, she explains how each of us can fulfill our full beauty potential, which is robbed by the toxic accumulation of cooked foods, dairy, wheat, salt and drugs. "Beauty lies latent under cushions of retained fluids, deposits of fat and sick tissues. Your beauty is buried alive" (p. 134).

She goes on to explain that on a diet of uncooked foods, "The landscape of the body will change. Fat that has accumulated in pockets under the eyes and at the jaw will melt away. The lumpy potato look of one's face will give way to sleek and smooth contours. The surface of the skin will become soft and smooth but still firm and supple. Visible pores will diminish. A sallow skin with a yellow pallor will turn into a porcelain-like complexion" (p. 137).

She furthermore describes the radiance and glow produced internally when there is "an abundance of clear, pink, almost transparent cells that light up the face," which is produced by superior blood circulation. Even the most beautiful supermodel would be enhanced by a raw food diet. She notes that the modern-day version of beauty is more in harmony with health than perhaps ever before, hence "the quest for beauty, instead of a narcissistic preoccupation, becomes a noble pursuit."

Tonya came across many women who would not eat a raw diet for their health, preferring just to take medications. However, they would go raw for beauty, as there is no pill for beauty. In her book Beautiful on Raw, ten women contributed their own experiences of how raw diets added to their beauty.

Various observations were that hair grew out with color instead of gray, sometimes with natural waves or curls, and fingernails grew strong, long and shapely. Cellulite vanished effortlessly. Puffiness in the body and face disappeared, and the skin cleared up. These women often get complimented on the "glow" of their faces. They feel confident without make-up. Their inner beauty and confidence also radiate. They look younger than ever and have no fear whatsoever of getting old. One of the women is 64 and still gets checked out by "the young whippersnappers" when she is at the gym!

Interestingly, many of them, before eating raw, had never been called "beautiful" by anyone, even when they were much younger. One of the women wrote about suddenly becoming aware of the benefits of being attractive, benefits which one who had always been beautiful would take for granted. People were nicer to her, cops didn't give her tickets, and salespeople waited on her first.

The authors of Raw Food/Real World explain, "People who eat only raw, plant-based foods have an unmistakable shine, like a pregnant woman in her second trimester or someone newly in love. They have a radiant positive energy."

Rhio, Raw Food writers and teachers discuss her book, Hooked on RAW

Kevin: You are pretty much an innovator when it comes to passing along message. I mean starting your own radio station, you're also a raw food chef and you had raw food potluck meals. Tell us about those potlucks.

Rhio: Okay. As I told you in the beginning, I became introduced to raw and living foods at that health juice bar that I worked at for the summer. Then when I went over to the other side, I had bought books from Ann Wigmore and read more about the raw foods. But at that time, I didn't really jump on it. What I did at that time is I transformed my diet in the sense that I eliminated all junk foods, white flour, white sugar, all of that. I went to whole foods. I went to lots of juices. I went to basically a really, really good diet, but not a raw food diet completely at that time. Then later on in my life, a few years after that, I had a situation where I was impacted negatively by an event that happened in my life. I use food, unfortunately; at most people do to assuage myself, to pacify myself, to keep myself sort of numb. Because I did that, I gained at that time 88 extra pounds. I'm only 5 feet tall. One hundred five, 110 pounds, that's my normal weight, but I had gained 88 extra pounds. I had that weight on for four years. Before that happened, I have been singing and my career was going pretty good . But then after gained the weight, I didn't feel like singing, of course. It just sort of stunted my whole life and my partner Lee, he saw that I was unhappy but he saw that...I kept telling Lee, you know I need an incentive. I knew I had to get the weight off, but I needed a really incentive. One day, he did this wonderful thing for me. When I think of it now, I mean it just moves me to tears practically. He went to one of the clubs that we used to work at and he got us a booking, and it was six weeks ahead. He said, "Okay now you have a really strong incentive." Boy was he right because I didn't want to show up in that club 88 pounds over my weight.

Kevin: Sure.

Rhio: What I did is there is a spa in Upstate New York called the New Age Health Spa and they had juice fasting here. I went up to the spa and immediately and I started juice fasting and doing exercises, the whole spa thing. I was able to stick to it, and by the time that six weeks rolled

around, I had lost half the weight.

Kevin: Wow!

Rhio: Half the weight in 6 weeks. And then, we went - we did the booking. It was a maybe 6- to 8-week booking and what happened is we worked like Friday, Saturday, and Sunday and then on Monday, I'd go back to the spa. So I kept working on it and working on it. It took me about, I would say 6 months or 8 months to lose the weight completely but I did lose it. And after that, that was a life-

changing situation for me because I saw how much better I looked and how much stronger I was and how this raw food was just such a healer and such so fantastic. I just couldn't go back.

Kevin: Alright.

Rhio: So then I told my partner...I said Lee, "I'm going on raw foods." And he said, "Well I'm not." Because he had become a vegetarian after he met me. Six months after he met me, he decided himself that he was going to become a vegetarian. So he figured he'd done his bit. That was it. He wasn't going to do anymore. So I'm telling you this long story by way of telling you how I came to have a book in the first place. I don't want to force anybody to my view. It doesn't work. So I've started looking at the kind of foods that Lee liked to eat. And I went to my kitchen. I started experimenting and I came up with substitutes to have the same flavor or similar flavors that he could enjoy. And so, I kept doing this and then through situations like for example if he was working late, I made dinner. He would come home. Is he going to start cooking now or is he going to eat this raw food?

Kevin: Right. Well that's extremely male.

Rhio: So you know he'd eat the raw food. So it went like that and after a period of let's say 2 or 3 years, I ended up with all these recipes and they were fantastic and I would be serving them at my raw food potlucks and people would go crazy for them. And Lee and the people would say you got to do a book, you got to do a book. And that's how I got my book. It wasn't something that I planned. It was something that just happened. I ended up with the recipes. But, also my book has a beginning section that is nothing about the recipes and I included that section in because I thought I needed to put all the things in there as to why it would be so important for people to think about adopting a raw food diet or at least incorporating more raw foods into their diet. You know what - give them all the reasons

why. And that beginning section of the book, and again, I'm talking about how it is out there when you're trying to get a book published. Two publishers came to me. They wanted the book, but they didn't want the beginning section.

Kevin: Yes.

Rhio: They just wanted the recipes. And I said no. I said no, this book has got to go with the reasons why.

Kevin: Yes.

Rhio: So that's another way. Now, somebody else, one of the publishers published a book from a friend of mine. She gave them what they wanted. What happened was the beginning part of my book, I think; it's about 130 pages if I'm not mistaken. And one time I was talking to the

editor. They had already sent me the contract and everything. I was ready to sign. I was talking to the editor and he said to me, "Can you possibly cut the beginning part down to 20 pages?" And I started laughing. I mean, it was incredibly rude I know. But it just...something struck me funny. I mean I had spent so many nights researching and you know making meticulously sure that checking my facts and rechecking.I couldn't. I couldn't. Now, the other lady that they went with, she did, she did a good job. But I couldn't do it.

Kevin: Yes. It was similar to the theme of the media.

Rhio: Yes it is.

Kevin: That we discussed before. There are people who are sensing the information. And they may not be the health experts.

Rhio: Right. And then I had, when I was trying to get my book out to these publishers, there was like an agent, a literary agent that I had talked to. And I sent her the manuscript and she told me "Take all that personal stuff out of the book." And I said, "This shows my experience and it will

help people to understand." And she said, "If you want to write a book about a memoir or something, you know, write a different book." But she just didn't understand. And I know that she didn't understand because even though my book is self-published, I have had tremendous success with it and I have, you know thousands, of letters that people had sent me telling me how much that book has meant to them.

Kevin: It's incredible.

Rhio: It was like a baby coming, you know. It had become, even my partner, Lee, and I love him, you know, but he was like putting the pressure on me to accept that deal from that one publisher.

Kevin: Right.

Rhio: Because you can write another book. And I said, "Look, this is like a baby coming. It's going to come the way it's going to come."

Kevin: What advice do you have to people out there who would listen to this, who have a book in them?

Rhio: Oh, I think they should write it. Because anything that you written from the heart, you know sometimes people tell me well you know all of these raw food books that are coming out now, isn't it impinging on your sales? I said "That doesn't matter." What matters is that this information gets out whether they pick it up from my book or from somebody else's book. I don't care. Just write it from the heart. Get a good editor. And then, you know, shop it around. I mean some books are being published now from publishing companies who are publishing raw food books. Try to get them not to meddle in what you what to say too much.

Kevin: Yeah. What are some of the issues that we're going to be facing in 5 to 10 years with our health, the media, and food industry? What are some of the main things that you think are coming?

Rhio: Well, I think it's already starting to happen now. Number one, on a positive side, there are numerous raw food, living food outlets, teachers, potlucks, restaurants, all kinds of information is coming forth. I just find that so, you know, empowering and this is what I see in the future. That cooked food restaurants are going to start incorporating some of these stuff. Just like in the past vegetarian offerings had been made available in regular restaurants. Now they are going to make raw food offerings available. So that's on the positive end. I just see the whole community growing by leaps and bounds.

The negative part that I see happening and starting to happen is that since the regular mainstream community doesn't understand what raw foods are about and doesn't understand how healthy they are, they look at it with some kind of trepidation. And so what happens is if a parent tries to raise their

children on raw food some of these parents are losing their children to child services or because those organizations don't understand what the raw food diet is about and so they think that the parents are like depriving or abusing their children in some way when they really are not. So this is a major problem that's happening. I know a lot of families who have lost their children and other families that could come to their aide aren't coming to their aide because they are afraid of losing their children.

So because of this problem, myself and another lady called Karen Ramsey who is writing a book now called Creating Healthy Children, and she is very involved with children and she raised her children on the raw food diet, her and I are trying to form an organization that will have two major goals. The first goal is like long term. It's really big. It's like we need to have in this country a constitutional amendment that guarantees us freedom of choice in health matters - freedom of choice in choosing how, if we have a disease, how we want to proceed with it? Not something that is forced on us like for example in California and many other states, there is only certain sanction like if you have cancer, there are only certain methods that are sanctioned. And if you go like a naturopathic doctor or any kind of alternative doctor and he gives you a different method that does not encompass like radiation, drugs and chemotherapy and surgery If you go try to do a natural system, it's not sanctioned and it's not legal.

Kevin: Yes.

>Rhio: So, the doctor can get in trouble. Even the patient can get in trouble. So, I see that as a problem because as I said originally in the earlier of part of this tape is that we have to create within our community an understanding of what really constitutes and creates health. And once that idea is

out there, and then more doctors, more even allopathic doctors are going to come over and understand that that creates health and there is nothing weird about it. And then they're not going to report parents that are feeding their children like what they consider strange, you know.

Kevin: Yes.

Rhio: And so, that's one part of this organization that we want to develop. We want to have this constitutional amendment. We should have been there originally, but it wasn't. But, you know many of the amendments were added later anyway. We want to create a coalition of people, doctors, nurses, social workers, scientists, and researchers that will come to be aid of these families in trouble - these families that have lost their children. So, when a family is struggling, they will be a coalition of people that will come to their aid whether it's in court, whether it's in filing papers, whether it's in

If you have heard much more about raw food diets and raw food weight loss may, in particular, you wonder if you can actually lose weight on the raw food diet.

First of all what is a raw food diet. Unlike other Diets out and completely unlike weight loss Diets, it is in principle a diet consisting of raw foods. Live foods such as some call them A raw food diet; can be whatever you want as long as it covers many or all raw foods. You've heard the buzz. The raw food diet is gaining momentum! The audience for the raw food books is expanding at a very fast pace. This is because the Baby Boomer generation, many of whom refuse to grow old, is looking for answers. Another reason is that the rising cost of health care (as well as the disappointing side effects of drugs and surgery) is creating a consciousness in people that they need to take responsibility for their health and not hire someone else to be in charge of their body's fate.

The word is getting out---the raw diet is not just another weight loss fad. This is the natural diet and people on this diet have reversed cancer, heart disease, hepatitis, and other major diseases-as well as minor nuisances such as herpes, athlete's foot, dandruff, and even sleepwalking.

The younger generation has also caught on to this diet. Most of them have come from the vegan population. These are ardently opposed to the eating of any animal products. Many feel the next step for them is to "go raw." Many of them view this diet as a spiritual practice, since the energy normally used to digest cooked food is freed up to go to the higher centers.

Then there are the women who also get hooked into this diet for beauty. Model Carol Alt is the ultimate example, and she showed the power of a raw diet to create a beautiful body and maintain youth by posing nude in December 2008's Playboy magazine. Women love this diet for weight loss and maintenance, soft and radiant skin, loss of cellulite, full hair (sometimes even reversing the gray!), and more.

The word is also getting out that the raw diet helps with athletic performance, getting the competitive edge at work, mental health (being freed from depression, schizophrenia, and more), and creativity.

But what does this strange diet consist of? Are all these raw fooders eating salads and munching on carrots and bananas all day? How could that possibly provide enough calories and variety to sustain people for the long run?

A typical raw food vegan diet consists of unheated (not above 118 F) fruits, vegetables, nuts, seeds, and sprouted grains and lentils. From this seemingly limited fare, however, one can create a wide variety of dishes, ranging from the "fast food" smoothies and salads to the gourmet imitations of cooked food dishes. Most raw fooders eat this way. They expand the variety of plant food they consume, eating a wide variety of olives, or exotic fruit, for example.

A raw vegetarian might also include raw egg yolks (providing they are from an organic, preferably flax

seed-fed, free range chicken) as well as some raw dairy such as kiefer (available in raw dairy states like California; otherwise you have to buy from the Amish or own part of a cow or goat).

There are also those who eat raw meat, such as steak tartar, ceviche, and sashimi. Marinating it overnight in lemon juice it is supposed to kill the parasites.

Omitting cooked food might seem like a huge sacrifice, but raw fooders don't feel deprived once they have weaned themselves from addictive processed food, filled with sugar, wheat, dairy, monosodium glutamate, table salt, aspartame and intense spices, all of which serve to hook the consumer into food addiction. Raw food actually tastes better than cooked food, because the flavor isn't cooked out into the air. You just don't need to add all those spices and toxic ingredients.

It is easy to make a raw, whole food recipe which most of us are very familiar with: guacamole is an example---just make it from whole foods instead of a mix! Or make trail mix from raw shredded coconut, nuts, seeds, and sundried raisons and apricots.

Many people who go raw use raw gourmet recipes that mimic their favorite cooked dishes until they are used to eating raw, after which they boast spending no more than 10 minutes a day in the kitchen. The raw gourmet dishes often require expensive machines, such as a Vitamix and a temperature-controlled dehydrator, but you can do a lot with just a blender and a food processor.

Here are a few gourmet raw recipes from The Live Food Factor, A Comprehensive Guide to the Ultimate Diet for Body, Mind, Spirit & Planet:

Sunflower Seed Pâté

1 cup sunflower seeds, soaked overnight, rinsed

1 cup pumpkin seeds, soaked overnight, rinsed

½ cup pitted olives

2 red bell peppers

½ bunch cilantro or favorite fresh herb

1 t Celtic or Himalayan salt

½-1 cup sun-dried tomatoes, soaked for 30 minutes and cut into small pieces with scissors

Put the seeds through a blank screen of a juicer. If you don't have a juicer with a blank screen, you can use a food processor with the "S" blade to blend them, but it won't be as creamy. Then, mix all other ingredients in the food processor with the "S" blade.

Raw Candy

Nuts, soaked 6-12 hours, rinsed and drained

Dates

Raw carob powder, to taste (optional)

Raw shredded coconut or unhulled sesame seeds

Mix nuts, dates and carob in food processor. Mix in a food processor with the "S" blade until the mixture forms a ball that bounces around inside that machine. Remove and form little balls. Roll the balls in sesame seeds and/or raw shredded coconut. These keep a long time in the freezer. Experiment with ingredient proportions and quantities to suit your own taste.

Deluxe Macadamia Nut Cheese

12 oz (3 cups) macadamia nuts, soaked 6-12 hours, rinsed and drained

1 t Celtic sea salt

2 cloves garlic

1 T fresh cilantro

¼ cup lemon juice

3/8-½ cup unpasteurized olive oil

Blend in food processor with the "S" blade, adding the nuts a little at a time. Mix until creamy, the texture of cream cheese.

Note: For a creamier mixture, you could put the nuts through a juicer with the blank screen before putting them into the food processor. In that case, you will need about half the olive oil! You might have to add one or two tablespoons more of oil.

Blend until it has the creamy texture of cream cheese. Serve on flax crackers, or use as a vegetable dip with zucchini, baby carrots, sliced bell peppers, fresh broccoli and so on.

Tahini Sauce

1 cup raw tahini

¾ cup unpasteurized olive oil

2/3 cup orange juice (about 2 medium-sized oranges)

3 cloves garlic

1½ inches fresh ginger

1 T nama shoyu (optional)

1-2 t Celtic sea salt

¼ cup fresh cilantro (optional)

Mix in food processor with the "S" blade, adding ingredients a little at a time. Mix until creamy. This is great on raw Oriental vegetables for a stir-fry or on Nori Rolls.

Chinese Stir "Fry"

1 foot long daikon radish

4 carrots

1 bunch green onions

5-6 stalks celery

½ head small cabbage

2 zucchinis

1 red bell pepper

1 cup mung bean sprouts

¾ cup watercress

3 stalks broccoli

1½ cups snow peas

Slivered raw almonds or raw cashews

Sesame seeds

Tahini sauce (see "Sauces, Salad Dressings, Condiments")

Tempeh (optional)

With the food processor, grate the daikon radish, and slice the carrots, celery, green onions, cabbage, zucchinis and bell pepper. (This is one time you will be especially thankful for your food processor: A job that could otherwise take an hour will be finished in minutes!) Put into a large bowl. Cut off florets from broccoli and toss into the mixture. Chop off tips of watercress and toss in, along with mung bean sprouts. Cut off stringy ends of snow peas and toss in. Fold in about a cup of tahini sauce. Top off with almond slivers (or truly raw cashews, sliced) and sesame seeds. Chop up tempeh and fold into mixture.

Serves 8-10.

Raw Hummus

2 zucchinis

¾ cup unhulled sesame seeds, soaked 6-12 hours, rinsed, drained

¾ cup raw tahini

¼-½ t cayenne

½ t celery salt

3-4 garlic cloves

1 t Celtic sea salt

¼ cup lemon juice

Blend in a food processor with the "S" blade, adding ingredients a little at a time until creamy. Serve on flax crackers or use as a vegetable dip with sliced zucchini, baby carrots, sliced bell peppers and fresh broccoli.

With a bit of effort, it is easy to transition to a mainly raw diet. After a year or so, most are satisfied with eating simply. Nothing could be tastier than Nature's fast food, after all!
